Laurus nobilus (bay tree)

Laurus nobilis, commonly known as the Bay Tree, is a classic evergreen shrub valued for its glossy green, aromatic foliage. The leaves are widely used as a culinary herb, adding rich flavour to soups, stews and slow-cooked dishes. In spring, the plant produces fragrant yellow flowers, followed by small black fruit that add seasonal interest. Its dense, tidy habit makes it ideal for hedging, topiary or container growing, and it performs well in coastal conditions.

Reaching around 8m tall and 3m wide, Bay Tree grows slowly and thrives in full sun to partial shade. Frost-tender when young, it becomes increasingly hardy as it matures and performs reliably across Queenstown and Central Otago when given some early protection. Its strong structure and aromatic foliage make it a versatile and attractive addition to both ornamental and edible gardens.
